4 large gem squash
500 g ground beef
1 Onion
2 tbsp cream cheese
1 tbsp olive oil
1 tsp Garlic
1 tbsp Paprika
1 tbsp Oregano

How to make stuffed squash keto recipe?
Cooking the gem squash

Cut the gem squash into equal halves
Remove the seeds inside {this can also be done after boiling the gem squash}
Boil with water in a pot on medium-high heat for 20 to 25 minutes
Preparing the ground beef
Chop onion into small even pieces
Add olive oil to your pan then place it on the stove. Heat your stove on a medium heat
Saute the onion for 3 to 4 minutes then add your garlic and ginger then continue to saute for another minute or so
You can now add your ground beef and cook for 5 minutes covered
Add your paprika, Oregano, black pepper, and salt to taste. Then give it a stir before adding your cream cheese
After cream cheese is added allow it to cook for an additional 5 minutes then remove it from the stove
Stuffing the squash

Place the boiled squash in a baking dish
add a layer of the cooked ground beef followed by a layer of mozzarella cheese. repeat the step until the squash is full. Put more cheese on top as your last layer
Preheat your oven at 190°c or 375 F.
Put your stuffed squash into the oven for 5 minutes or until the cheese is golden brown.
Serve while hot

All squash is suitable for this recipe. I choose gem squash simply because it is keto friendly and very low in carbs. You can use different squash that is low carb and keto-friendly when following a low carb diet.

Gem squash one cup of 100g has 6g of carbohydrates
spaghetti squash 100g has 7g of carbohydrates
Butternut squash 100g has 12g of carbohydrates
Notes and tips
You can also remove the seeds from the squash after boiling them, I find this to be easier cause they are soft at that stage
Don’t add a lot of water all at once, you don’t want your squash full of water. In an unfortunate event where this happens, you can hold the squash with the open side facing down then press out the water using a spoon.
