
If you have been on a keto diet for a while you would know how important breakfast is. This lazy keto breakfast not only is filling but it’s high in protein, a good way to kick start your metabolism.
What is lazy keto and can I still lose weight?
Lazy keto shares the same concept with the normal keto diet however on a lazy keto diet the carbs are not as strict. You are allowed a carb count from 20-50 g per day. I am actually currently following this as I was advised by my doctor. I had to switch cause I am breastfeeding, he recommended lazy keto for breastfeeding moms.
You can lose weight however not as fast as you would on a normal keto diet. You still need to follow the rules. Cut out processed food and sugar and stick to healthy fats.
Equipment needed to make this lazy keto breakfast
- Frying pan
- Baking dish
Ingredients
500g ground beef
1 medium onion (chopped)
1 large grated tomato
2 large eggs
½ cup mozzarella cheese
1 ½ Tbsp Olive oil
1 Tbsp Oregano
1 Tbsp paprika
1 Tbsp black pepper
1 Tsp crushed garlic
1 Tsp salt
1 Tbsp of keto friendly sweetener (optional)
Instructions
1 Switch your top stove on high, then add the olive oil and onion to a frying pan. Fry onion till it changes colour to slightly brownish. Then add the garlic a minute before your add the ground beef.
2 Add your ground beef and cover with a lid then let it cook for 5 minutes.
3 Add your grated tomato then seasoning, Paprika, Oregano, black pepper and salt to taste.
4 Let it cook for another 5 minutes or so until the ground beef is nicely brownish.
5 Next step you would want to preheat the oven at 220C/430F
6 Remove the pan from the stove then transfer to the baking dish. Sprinkle your sweetener to balance the sourish taste from the tomato. Because the mince is a bit oily there is no need to grease the baking dish
7 Lay the ground beef flat on the baking dish and open 2 circle shaped spaces in the middle to add the 2 eggs.
8 top it with mozzarella cheese the bake for 5 to 10 minutes until egg white is visible and the cheese is crispy brownish. Serve while hot
Notes and tips
- This recipe can be cooked on the top stove from start to finish is you do not have an oven
- You can use canned tomatoes instead of a grated one
- If you are not following a keto diet you are welcome to use sugar in a place of sweetener
- Seasoning ? You can play around with that too to suit your taste buds
