Using a food processor is one of the easiest and quickest ways to rice up cauliflower. However, you can still make it without a food processor. It is easy but it will slightly take you longer.

You will start rinsing it then splitting the head into halves then slice out the core. If there are any green leaves you would want to take that out as well.

We are going to use the cheese grater that we all have. Cut the halves into quarters then grate them. you will use the side with the largest holes to get that fluffy rice texture

Best way to store cauliflower rice

I use the normal zip plastic bag and keep it in a refrigerator for up to 4 days. You can also freeze but you need to freeze it measurable amounts for easy cooking for your future servings.

How to cook frozen cauliflower rice

You cook it the same way you cook fresh cauli rice. You can pop it in a microwave for a minute or so but not more than 2 minutes because it might steam the veggie. Please squeeze out any excess water that might be coming from the ice to avoid having a mash-like situation.

How to make this fluffy cauliflower rice keto recipe

You will need the following

  • 1 Head of cauliflower
  • 1 Yellow onion
  • Bell peppers
  • 2 Tbsp of olive oil
  • 1 tsp salt
  • 1 tsp black pepper

  • You start by cutting your cauliflower into half the halves into quarters. Then grate it using the side with the biggest holes. If you are using a food processor then you would want to further cut it into smaller cubes then put them into your food processor until its evenly chopped
  • Dice your onion and your bell peppers if you will be adding them
  • Heat your stove at medium-high and place your skillet on top
  • Add your onion and bell peppers and saute until the peppers are nicely cooked. You looking at 5 minutes or more depending on the power of your stove
  • You can now add your riced cauliflower, salt, and black pepper. Fry for an additional 3 to 5 minutes. Do not cover it, serve hot or cooled.

Notes and Tips
Do not cover the pan to allow the water to evaporate. This will help with your rice not turning into mash
Don’t overcook it, you don’t want to have a saggy situation.
