How to roast potatoes and carrots in the air fryer.
1 Wash your carrots and potatoes.
2. Cut your potatoes into cube.
3. Peel your carrots then slice them into a similar thickness as your potatoes.

4 In a large bowl, add your potato cubes and carrots, and then drizzle with olive oil. You can go in with your garlic powder, cayenne pepper, Oregano, and salt to taste.

5. Put your potatoes and carrots in the air fryer basket in a single layer.

6 Air fry at 200°C for 25 minutes and shake the air fryer basket halfway through the cooking time. For extra crispy potatoes air fry for additional 5 minutes at 220°C

Potatoes You can easily make this recipe suitable for those following a low-carb diet. You can
use sweet potato or radish.
I sometimes use red baby potatoes with skin and they come out with super crispy skin that everyone loves.
Carrots – Although carrots are a versatile veggie that fits in most diets, you can still replace this with parsnip or turnips.

These potatoes and carrots will stay in the fridge for up to 7 days in an airtight container. They will lose the crispness of the skin. To reheat, preheat your air fryer at 200 c for 5 minutes then put your roasted carrots and potatoes in the air fryer basket and reheat for 3 to 5 minutes.
