How can I tell if lamb is cooked?

By using a meat thermometer the internal temperature of a well-done lamb chop should be around 170 F while medium-rare is around 130 F to 135 F. If you don’t have the thermometer then when you cut it and it’s brownish then it is well done. A slightly pinkish color in the middle indicates that it is medium-rare.
