It’s dripping with a creamy blueberry compote made with fresh berries and sprinkled with powdered sugar. It’s a perfect breakfast to express yourself to your loved ones.

I have been having an official french toast festival lately and this recipe was inspired by the Horchata French Toast I made a little while ago. Tell you what, I love french toast so much but I wonder why it’s labeled as breakfast instead of dessert🤔. Either way, I am going to try out different ways to enjoy french toast and I will be sharing the recipes here with you.

How to make french toast
- Slice your bread into 1-inch thick slices.
- In a bowl, beat 2 eggs, 3 tablespoons of milk, 2 tablespoons of sugar, a teaspoon of vanilla extract, and a teaspoon of cinnamon. Whisk these ingredients together, the amount of sugar will depend also on your taste buds. If you want more you can add more.
- Heat your skillet on medium-high then add a tablespoon or 2 to it. What I do here is add a tablespoon then add more as I go with other slices.
- Dunk your bread in the custard for about 5 to 10 seconds on each side and let the excess liquid drip off before you put it on the skillet.
- Cook each side for 4 to 6 minutes or until golden brown.
- Serve with your homemade blueberry compote.

Making the blueberry compote for french toast.
- In a saucepan add about half a cup of blueberries, ¼ cup of water, a tablespoon of fresh lemon juice, and 3 tablespoons of sugar.
- Bring this to a simmer for about 10 minutes or until the berries are cooked and the sauce has thickened. If the sauce is too runny, add cornstarch to thicken it.
Making a healthier version of this recipe pointers:
- You can use less sugar or use sugar substitutes that are less in calories.
- I prefer making the french toast in the air fryer to avoid having to use butter. Not only that but the air fryer makes the crunchy french toast.
- You can substitute the full cream milk with almond or coconut milk.

The key to the custard is to use eggs that are at room temperature. This will help to prevent them from cooking too quickly when they hit the hot pan.
Make fluffy french toast by adding a tablespoon of all-purpose flour to your custard.
