Bacon wrapped cauliflower

Growing up I never liked cauliflower and my mother wanted us to eat our vegetables like any other mother out there. Since I am a mother myself, I always put myself in my kids’ shoes and try to make vegetables enjoyable for the little ones. With these bacon-wrapped cauliflower bites, I don’t have to force anyone to eat their veggies on the plate.
Air fried vegetables are just a game changer, they are always tasty with crispy edges. I have made anything from air fryer roasted potatoes and carrots to air fried cucumber chips. The list just keeps on growing and I love to experiment with my air fryer
You will need the following to make these bacon-wrapped cauliflower bites

- Bacon
- Cauliflower
- Olive (optional?)
- Salt and pepper to taste
- Toothpicks to secure the ends

Air fryer cooking instructions
1. Preheat your air fryer for 3 minutes at 200c
2. Cut the cauliflower into florets and your bacon into half if the strips are long. You will want to wrap one floret to see how long the bacon strip needs to be.
3. On a stove, bring water to boil in a medium pot. Put your cauliflower florets and boil for 3 to 5 minutes. You can also steam them so you don’t lose the nutrients.
4. Remove from the water and allow them to cool down, you don’t want to burn yourself. Once they cooled down, add to them a tablespoon of olive oil. You can skip this part if you want as bacon has enough fat. To taste, season with salt and pepper.
5. Wrapped each floret with a bacon strip and secure the end with a toothpick. Repeat until all cauliflower florets are wrapped with bacon.
6. Transfer the bacon-wrapped florets into the air fryer basket and air fry for 10 minutes at 200C. You may flip them halfway through the cooking time. Serve while still warm with a dipping sauce of your choice.

Recipe substitute and variations
- Cauliflower – The cauliflower can be substituted with broccoli or Brussels sprouts.
- Make it Spicy with a Sprinkle of chili pepper flakes.
- If you do not have an air fryer and you can use an oven and they will come out nicely roasted.
- You may skip the parboiling part and just cook it for an additional 5 minutes at a lower heat to avoid the bacon from burning.
Storage and reheating tips
These bacon-wrapped vegetables will be good in the fridge for up to a week. If you have any leftovers, put them in an airtight container then put them in the fridge.
To reheat them you can use the microwave or air fry them for 3 to 5 minutes. I like to use the air fryer to reheat because it brings them back to life.
Recipe tips
- Please parboil the cauliflower or steam it before wrapping it with the bacon. Be sue to let it cool down before working with it after boiling.
- For a crispy bacon you may let it cook in the air fryer for an extra 2 to 3 minutes.
- For added deliciousness serve with a dip sauce of your favorite or simply drizzle it on top as a finishing.
